Premium Conveyor Belt Sushi "Mutenkura Shinjuku" Opens on July 9

The premium conveyor belt sushi "Mutenkura," which had been operating mainly in the Kansai area, comes to Shinjuku. "Mutenkura Shinjuku" will open on Thursday, July 9.

The location is in the "Shinjuku Takano" building in Shinjuku 3-chome. It is the second store in Tokyo following the Nakameguro branch, and the largest-scale store ever for the Mutenkura brand. By opening in Shinjuku — one of the world's leading terminal stations — the aim is to communicate the appeal of ingredients from all across Japan to a diverse clientele from both home and abroad.

The theme is "Connecting regional areas and the city center through food experiences." In addition to a menu where morning-caught local fish from Hokkaido is transported via the Hokkaido-Tohoku Shinkansen and served on the same day, new initiatives such as pairings of sushi with Japanese tea are also being developed.

The interior, which inherits the "Kura" that is also an identity of "Kura Sushi," is themed around "a secret hidden storeroom (home) that adults frequent," with lighting dimmed from the entrance all the way to the seating area to create a space where guests can spend time quietly.

The main seating consists of roomy box seats, and 19 counter seats are also available for solo diners.

While the conveyor belt lane continues, amusement elements such as "Bikkura-Pon!®" and the water retrieval system have been removed, allowing guests to relax and enjoy sushi, à la carte dishes, and drinks in a calm atmosphere.

The biggest selling point is "Hokkaido-sourced morning-caught local fish transported by Shinkansen."

With the cooperation of local fishery companies, the fish is quickly processed on-site, then delivered to the metropolitan area via the Hokkaido-Tohoku Shinkansen using the train luggage transportation service "Hakobyun," making it possible to serve it in the store by the evening of the same day.

The local brand salmon "Hakodate Salmon," with which you can enjoy the umami of fat unique to fresh fish, will be sold for a limited period until Sunday, August 2.

In addition, every Wednesday and Sunday, depending on the catch situation, items including "Hakodate Ozuwai Crab — One Whole Crab" steamed whole and alive in-store, as well as "Hakodate Hakkaku," "Hakodate Kurosoi," "Hakodate Aotsubu-gai," "Hakodate Kurogarei," and "Hakodate Samegarei" are available, letting guests savor highly fresh Hokkaido local fish right in Tokyo.

Of course, the fresh fish transportation using the conventional Hokuriku Shinkansen also continues. During periods when fixed-net fishing in Hokuriku is difficult — such as in winter — Hokkaido-sourced fresh fish will be utilized, aiming for a stable supply of products.

And another new initiative is "an industry first: "sushi × Japanese tea pairing."

Under the supervision of tea master Kenta Ikeda — holder of the highest rank in tea tasting appraisal, "Tea Master Judan (10th Dan)" — teas have been selected to bring out the umami, aroma, and fat characteristics of each topping.

The high-heat-roasted green tea "Chiran Hana," which pairs well with blue-backed fish,

Also, just as at the Nakameguro branch, the familiar Kura Sushi menu items are served at "Mutenkura Shinjuku" with an extra touch of craftsmanship.

For example, "kazari-bocho (decorative knife cuts)." By making "decorative knife cuts" into the topping, soy sauce becomes easier to coat the topping, the umami becomes easier to taste, and the appearance is finished more beautifully (*Some toppings do not receive decorative knife cuts).

Furthermore, the same applies to "hake-nuri (brush coating)." By applying the carefully crafted dashi soy sauce with a "brush coating" just before serving, the deliciousness of both the topping and the shari (sushi rice) can be felt more fully (※Excluding some menu items and items served on the conveyor belt lane).
