Freshly-shaved bonito flakes as the star of fast food Dashi cuisine specialty store
'Bushimaru' Opens in Shinjuku on 12/22
Dashi cuisine specialty store 'Bushimaru,' where you can luxuriously savor the dashi umami of the highest quality "honkarebushi (true dried bonito flakes)" from Makurazaki City, Kagoshima Prefecture, opens on Monday, December 22, 2025.
Featuring "Nama Kezuri Katsuobushi Gozen (Freshly-shaved Bonito Flake Set Meal)" and "Chuka Soba with Freshly-shaved Bonito Flakes" as signature menu items, they propose food experiences where "dashi," "rice," and "chuka soba" are the stars, in a "Japanese fast food" style.
The location is the restaurant area on the first basement floor of the Shinjuku main store building of 'Kinokuniya Bookstore.' The landmark is large white wood sliding doors with glass windows.
The interior is impressive with walls based on a deep "blue" that "images the sea." It's finished as a space where Japanese tranquility and modern beauty coexist.
n a "dignified" atmosphere, 14 counter seats with a comfortable Japanese-modern feel where the wood texture adds softness. It's an appearance where you can quietly enjoy meals while facing the food.
Note that some space in the store also stocks merchandise sales.
The concept is "Freshly-shaved flakes that make everyday life luxurious." Freshly-shaved bonito flakes that can only be tasted with a 10-minute expiration date luxuriously color everyday life.
Now let's introduce the details of "Japan's No. 1 egg-on-rice" and "bonito flake dashi ramen."
■"Nama Kezuri Katsuobushi Gozen (Basic Set)" (1,600 yen)
"Japan's most luxurious egg-on-rice," reconstructing "Japanese breakfast" to fit modern lifestyles. With respect for ingredients and commitment to handwork, they finished it with simple yet content where each item's presence stands out.
For freshly cooked "rice," they use Aomori Prefecture brand rice "Seiten no Hekireki," characterized by elegant sweetness and good grain standing. Each time you put the fluffy cooked rice in your mouth, the original aroma and umami of rice spread.
For "egg," they adopt premium brand egg "Yumeou (Dream King)" which won first place for three consecutive years at the 'Tamagokagohan Festival' and was inducted into the hall of fame. It's a luxurious taste that changes the concept of "egg-on-rice."
When combined with freshly-shaved "honkarebushi" served in a heap, "bonito flakes' fluffy fragrance," "egg's rich richness," "rice's pure sweetness," and "texture" unite as one, gently spreading throughout the mouth for a "blissful food experience" you can savor.
Furthermore, they line up "miso soup" made with special blended miso that maximally brings out bonito dashi umami, and 16 types of "rice accompaniments" carefully selected from across the country as side dishes.
Wakayama Prefecture / ""Kishu Nanko Domestic Bonito Umeboshi," Fukushima Prefecture / ""Green Chili Pepper Miso," Kyoto Prefecture / ""Morning Pickled Kujo Leek," Seto Inland Sea / ""Kamaage Shirasu," Aomori Prefecture / ""Tsugaru Pickles with Kazunoko," Toyama Prefecture / "Junpuya Squid Shiokara," Hokkaido / "Spicy Mentaiko," Kyoto Prefecture / "Silver Salmon Flake Sansho Saikyo Miso," Hyogo Prefecture / "Yumeou Egg Yolk Tamari Soy Sauce Pickled," Hokkaido / "Wild Sockeye Salmon Sujiko Soy Sauce Pickled"... with abundant variety.
The appeal is also being able to freely combine them according to the day's mood. Note that during evening hours they can be enjoyed as "alcohol accompaniments."
■"Chuka Soba"
(Left) "Tamari Shoyu Dashi Chuka Soba" (1,600 yen)
(Right) "Hofun Truffle Dashi Shio Soba" (1,600 yen)
Two types are prepared: "Tamari Shoyu Dashi Chuka Soba" layering tamari soy sauce's mellow richness, and "Hofun Truffle Dashi Shio Soba" where truffle aroma spreads.
Both boast "soup" without miscellaneous flavors, with deep profoundness based on aroma and umami, using only the highest grade "Makurazaki Honkarebushi."
For "noodles," they carefully select Hokkaido-produced "Haruyutaka Special Grade," called Japan's finest domestic wheat. Characterized by chewy firmness derived from high protein, and elegant sweetness and fragrance that spreads the more you chew.
By adding freshly-shaved "honkarebushi" served in a heap, umami dissolves into the entire "soup," and you can also enjoy the taste contrast that changes over time.
"Chuka soba" where three-dimensionality and depth increase with each bite is a one-and-only taste where "aroma," "depth," and "sharpness" stand out. You'll be satisfied as "a bowl where you eat aroma."
New Japanese fast food restaurant 'Bushimaru' where you can taste dashi umami through "gozen" and "chuka soba." While luxuriously savoring bonito flake umami, why not rediscover not only "dashi" but also "Japanese rice culture" and "chuka soba"?
