Men Ginza Onodera Higashi-Ginza Store
The long-awaited second store from 'Men Ginza Onodera Main Store', which was born in Omotesando in May 2024, appears! 'Men Ginza Onodera Higashi-Ginza Store' will open on Thursday, December 4, 2025.
The location is near 'Mitsukoshi Ginza Store'. It's on the first floor of a building slightly off Harumi Street. Nearby, famous ramen shops also line up, making it a "fierce ramen battleground".
The white wood counter full of cleanliness has an atmosphere like a "sushi restaurant". They're also particular about a style that doesn't place condiments.
On the menu, "Soy Sauce Ramen" comprehensively produced by Chef Keiichi Terada (left) of 'Makiyaki Ginza Onodera', which has continuously earned one Michelin star for 6 years in the 'Michelin Guide', is of course available.
Furthermore, as a new challenge this time, "Salt Ramen" and "Umakara Ramen" developed from scratch by Chef Yuji Ono (right) of 'Men Ginza Onodera Main Store' are also lined up.

【Salt Ramen】
■"Special Salt Ramen" (1,480 yen) (1 smoked chashu, 2 duck chashu, green onion, menma, celery, boiled egg, herb butter)
"Salt Ramen" was developed as 'Men Ginza Onodera's' new royal road taste, conscious of the needs of "women who want to thoroughly enjoy ramen" while being simple. It apparently took one year to complete.
They combined original "salt kaeshi" with clear broth soup that maximally brings out chicken umami, repeatedly trial and error with several types of salt including sea salt and rock salt, seafood broth, etc.
By adding "parent chicken fat" and "duck fat", they plus unique flavor. Salad celery becomes an accent. Let's enjoy "flavor change" while gradually melting herb butter.
And for noodles, they carefully select Hokkaido-produced wheat flour "Kitahonami" particular about smoothness and texture. They finish with custom-made noodles with original blending.

The crystal-clear soup, while simple, makes ingredient flavor and umami stand out.
■"Supreme Salt Ramen" (2,300 yen) (2 smoked chashu, 5 duck chashu, green onion, menma, celery, boiled egg, herb butter, truffle wonton)
Toppings include fragrantly smoked domestic pork, duck chashu with exquisite grilling, furthermore the 'Main Store's' secret recipe herb butter, "Special Truffle Wonton" fragrant with truffle, colorful aromatic vegetables... abundant.
【Umakara Ramen】
■"Special Umakara Ramen" (1,580 yen) (1 smoked chashu, 2 duck chashu, green onion, menma, celery, boiled egg)
Developed as a menu exclusive to 'Higashi-Ginza Store' against the background of frequent spice additions and spicy ramen purchases at the 'Main Store', plus the recent spicy noodle boom.
They layered soy sauce soup on spicy paste blended with chili peppers, green peppers, etc.
■"Umakara Ramen" (1,080 yen) (1 smoked chashu, green onion, menma, celery)
For finishing, they generously pour special spicy oil based on chili oil, sesame oil, garlic, etc., and even amid powerful spiciness, umami spreads, becoming a masterpiece that makes you addicted with one bite.
Noodles are the same as "Salt Ramen", custom-made noodles with unique blending using Hokkaido-produced wheat flour "Kitahonami".
■"Supreme Umakara Ramen" (2,400 yen) (2 smoked chashu, 5 duck chashu, green onion, menma, celery, boiled egg, truffle wonton)
Toppings of fragrantly smoked domestic pork, duck chashu with exquisite grilling, truffle wonton, colorful aromatic vegetables, etc., add color.
【Aedama】
■"Aedama" (600 yen)
"Aedama" was devised from customer voices requesting large servings or extra noodles, and to help customers enjoy ramen more.
■"Niboshi Aedama" (650 yen)
t's OK to have it as is after eating ramen. Adding remaining ramen soup allows you to enjoy a different taste.
■"Umakara Aedama" (700 yen)
Enjoy "4 times in 1 time" as flavor change, tsukemen, extra noodles.
【Soy Sauce Ramen】

The 'Main Store's' signature menu "Soy Sauce Ramen" can also be tasted without exception.
