'COC', which handles brands such as Hokkaido-born sweets 'SNOWS' and 'CHEESE WONDER', will open the new Tokyo-born Western confectionery brand 'FONDAN' on Wednesday, November 19, 2025.

A permanent store will be developed on the first floor of 'Daimaru Tokyo Store', directly connected to Tokyo Station. New products appear that could only be born because they are a group that consistently handles everything from the production of raw materials such as milk and eggs essential for making delicious confections, to planning and manufacturing.

The biggest feature is "homemade fresh butter".

Inspired by the long, rich lingering richness of French "fresh butter" that undergoes no heat treatment for refining, they aimed for a unique taste completely different from regular butter or cultured butter.

Then, freshly squeezed pasture-raised milk is carefully manufactured in-house with minimal sterilization treatment and non-homogenized method.

They completed their unique "homemade fresh butter" by protecting the "soft flavor and delicacy that raw milk possesses" as is, allowing enjoyment of a long, rich lingering richness.

The brand name 'FONDAN' is a coined word derived from the French FONDANT (melting).

Let's introduce two types of products using "homemade fresh butter" where you can enjoy a melting texture in your mouth and a rich lingering richness.

■"FONDANSAND" (5 pieces: 1,350 yen, 10 pieces: 2,646 yen)

FONDANSAND

Melting caramel is sandwiched in crispy thin-baked langues de chat. By melting "homemade fresh butter" into the caramel at the finish, it achieves a taste with deep, pleasant lingering richness. It's a new textured deliciousness where the crispy texture of langues de chat harmonizes with richly smooth melting caramel.

FONDANSAND

The key to deliciousness is the unique method of gently melting homemade fresh butter with the residual heat of cooked caramel. The deep, pleasant lingering richness of fresh caramel spreads.

And the thinly baked langues de chat cookies are characterized by fragrant butter aroma and delicate, light texture.

■"FONDANGALETTE" (4 pieces: 1,458 yen)

FONDANGALETTE

Fondan with "homemade fresh butter" melted in is lavishly poured over crispy, crumbly fragrant galette. After the rich, flavorful luxurious taste of galette, the deep pleasant richness of fondan and the soft aroma of butter gently spread. It's a luxurious deliciousness where crunchy dough and smooth mouthfeel overlap.
